5 Deliciously Creative Cool-Weather Crop Recipes For Thanksgiving

1. Snap Peas – Sugar Snap Pea Soup

Soups don’t get nearly enough love on Thanksgiving. If you’re in cooler regions like us, the weather begs for something as warming as it is delicious. This mint-tipped and spice-infused recipe can be served cool -- as the recipe suggests -- or warm. We suggest going with a quick warm up before indulging. Not only is this recipe delicious but it is beautiful to look at.

2. Spinach – Spinach Parmesan Baked Mashed Potatoes

You will find that we have a slight preference for parmesan on Thanksgiving tables. For us, it just works. This recipe is simple and can be warmed to perfection just before dinner begins. We all love our mashed, but toss in some fresh-picked spinach, parmesan, and crispy fried onions (also a cold weather staple) and you have a surefire Thanksgiving winner.

3. Broccoli – Skinny Broccoli Salad

For starters, this recipe takes 10 minutes of prep time and no cooking whatsoever. With plenty to be done preparing the greenhouse for winter, that’s a winning recipe for us (forgive the pun). This recipe actually calls for three cool-weather veggies; broccoli, onions, and cauliflower. This is also the healthiest of these recipes – by a longshot.

4. Cauliflower – Parmesan Cauliflower Bites

Mmm, parmesan. Yes, this is the apple – or cheese – of our eyes at the moment. We’ve also become slightly obsessed with roasted cauliflower lately. And with this cheesy, panko-crusted option, even the kids that usually push this healthy veggie to the side of the plate will love this starter.

5. Onions – Bloomin’ Onion Bread

This is a versatile recipe to bring to Thanksgiving. You can serve this as an appetizer with a glass of red wine, with soups, or as a hearty side. This is a (slightly) healthier alternative to garlic bread, and will blow those boring dinner rolls clear out of the water. Easy to make and even easier for everyone to enjoy.
