Making ginger beer

I am sure you have had ginger ale, the sweet, mass-produced beverage that you may have when you are sick or as an alternative to other sodas. However, have you ever had ginger beer?

Ginger beer is a much less sweet, non-alcoholic version of ginger ale; and if you like spicy, tart, and refreshing, then you will really like this. A way to understand the difference is this: ginger ale is sweet with a little spice from the ginger; ginger beer is spicy, with a little sweet from the sugar.
